Ingredients
- Pasta 350g short pasta, such as rigatoni or fusilli.
- Chickpeas 2 cans, drained and rinsed.
- Garlic 4 cloves, thinly sliced.
- Lemon Zest and juice of 1 large lemon.
- Parmesan or pecorino About 60g, finely grated, plus more at the table.
- Parsley A small handful, chopped.
- Olive oil, chilli flakes, salt, pepper Pantry staples that make the sauce work.
Method
- Put a large pot of salted water on to boil Salt it more than you think; this seasons the pasta.
- Slice garlic, zest lemon, chop parsley Do this before the pan is hot.
- Cook pasta until just shy of al dente Reserve 2 mugs of pasta water before draining.
- Warm olive oil, garlic, and chilli flakes Medium heat; stop before the garlic browns.
- Add chickpeas and mash a few in the pan The mashed chickpeas help thicken the sauce.
- Toss pasta with chickpeas and pasta water Add water gradually until glossy, not soupy.
- Finish with lemon juice, zest, cheese, and parsley Take the pan off the heat before adding cheese.
- Taste for salt, pepper, lemon, and chilli Bright and peppery is the target.
Serve
- Serve with extra cheese and a green salad Best eaten right away; leftovers reheat with a splash of water.
